Tahini Swirl Energy Bars

ENERGY BARS topped with smooth DARK CHOCOLATE..... yes please!

These bars are so simple to whip up and only take like 5 minutes to make. They are the perfect snack on the go and a perfect energy booster to help you power through your day.

The oat-y, date-y base and dark chocolate crunch on top combine together to form such a delicious bar.

Makes 5 Bars

Vegan energy bars
  • 150g oats

  • 50g ground almonds

  • pinch of sea salt

  • 100g dates, soaked in boiling water for 5 minutes

  • 1 tsp vanilla essence

  • 2 tbsp almond milk

  • 60g dark chocolate, melted

  • Tahini or nut butter, to swirl

In a food processor, blend together the oats, ground almond and salt until a course flour is formed. Add in the dates, vanilla, maple and almond milk. Blend until a 'dough' has formed. Line a loaf tin with baking paper and press the bars into the tin. 

Pour over the melted chocolate and swirls of tahini or nut butter Put the tin into the freezer for at least one hour. Remove and chop into bars. Store in a container in the fridge for up to a week.
