Coconut Banana Pancakes

I love these pancakes for brekkie on the weekend or as a delicious healthy afternoon snack. Wholemeal flour contains much more fibre than regular flour and is not as processed. These pancakes are healthy and wholesome while still having the taste of your normal processed suger loaded ones!

SERVES 2 – MAKES 2 -3 EACH

  • Ingredients;
  • 1 banana
  • 100g Spelt Flour or wholemeal flour of preference
  • 250ml Almond milk
  • 3 tbsp desiccated coconut
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • Large handful of berries

Put all the ingredients apart from the berries in a food processor. Blend until smooth. Mix in the berries. Heat up some coconut oil in a pan. Scoop 2 heaped tablespoons into the pan per pancake. Cook for 1 minute each side. Top with whatever you fancy.

Nutrition Facts;

  • Wholemeal flour is full of fibre, much better than processed white flour.
  • Berries are packed with antioxidants, fibre and many vitamins.
