Vegan Banana Oat Pancakes

I think everybody appreciates a good stack of pancakes and these are no exception.

I have been making these pancakes for ages and have FINALLY mastered the fluffiness factor. Not only are these pancakes delicious and fluffy, they are also so nutritious, full of complex carbs, omega-3 fats as well as vitamins and minerals.

Serves 2

vegan banana oat pancakes
  • 1 banana

  • 1 and 1/2 cups oats

  • 1 tsp baking powder

  • 150ml almond milk

  • 1 tbsp milled flax seeds mixed with 2 tbsp water and let sit for 5 minutes to form a flax egg

  • 2 handfuls blueberries

  • toppings of choice: berries, banana, dairy-free yoghurt, maple syrup, nut butter etc.

In a blender, whizz up the oats to form oat flour. Add in the rest of the ingredients apart from the blueberries and flax egg. Blend until a smooth mixture forms. Stir in the flax egg and blueberries.

Heat up a non tick pan over a medium heat or a frying pan with some coconut oil. For each pancake, add 2 tbsp of the mixture on to the pan. Fry them for 2 minutes each side, until golden pan (add a lid on the pan for ultra fluffiness). Repeat until the mixture is gone. Stack and top with your fave toppings and enjoy.
