Vanilla Protein Pancakes

Stacks on stacks of epic pancakes!

I love to get stuck into loaded pancakes and I had not made them in ages so decided to whip them up. These are a take on the classic banana oat pancakes as they have the addition of my favourite protein powder, Vivo Life. This is optional but I love the flavour and boost of protein it adds.

Feel free to get creative with your favourite toppings, my faves are; coconut yoghurt, berries, maple syrup, nut butter, caramelised banana…

Serves 1:

Vanilla Protein Powder
  • 1 banana

  • 50g oats

  • 1 tsp baking powder

  • 1 scoop of vanilla protein powder ( I love Vivo Life) (optional)

  • 100ml almond milk

  • handful of blueberries

  • coconut yoghurt, berries, maple syrup etc., to serve

Blend all the ingredients together except for the blueberries in a blender. Stir in the blueberries. Heat up a frying pan with some coconut oil if it is not a non-stick pan. Add 2 tablespoons of the pancake mix to the pan per pancake. Let the pancakes cook until bubbles form before flipping them (approx 1-2 minutes per side). Stack them up and top with the toppings of your choice.
