Vegan Lemon Poppy Seed Muffins (Nut Free)

Yep, you read the title right. VEGAN lemon and poppy seed muffins!

Lemon Poppyseed Muffins

These are zingy, sweet and fluffy all at the same time. They are the perfect morning or arvo snack that everyone will love. You can even add some icing or glaze if you like. So, go ahead, give them a go and let me know what you think.

Makes 8

Dry Ingredients:

  • 200g spelt flour

  • 1 tsp baking powder

  • pinch of salt

  • 2 tbsp poppy seeds

  • 50g of coconut, brown or caster sugar

    Wet Ingredients:

  • 175ml milk of choice (almond, coconut, soy etc.)

  • 75g soy yogurt (or yoghurt if choice)

  • 1 tsp vanilla essence

  • 2 tbsp melted coconut oil

  • juice and zest of 1 lemon

Lemon Poppyseed Muffins

Preheat the oven to 180*C. Line a muffin/cupcake tin with cupcake cases.

In a mixing bowl, stir together the dry ingredients. In a separate bowl, whisk together the wet ingredients. Add the wet mix to the dry and fold the mix until smooth.

Add the mix into the cases and bake in the oven for 20 minutes. Leave to cool on a rack and enjoy!
