Lemon and Blueberry Baked Oats
Zingy and sweet with a crisp top and a gooey middle, this is oats like you have never had before.
I LOVE baked oatmeal. It brings oats to another level. Don’t get me wrong, I adore my bowls of porridge but its nice to change it up when I have more time on my hands and bake my oats.
This combo of the zesty lemon and sweet oats is the perfect mix and the flavour is incredible, if I say so myself ;).
1 banana, 1/2 mashed, 1/2 sliced for topping
1/2 zucchini (optional), grated
1 tsp vanilla essence
juice from 1/2 a small lemon
dash of cinnamon (optional)
150ml almond milk (use 100ml if not using zucchini)
1 tsp baking powder
1 tbsp of coconut flakes or desiccated coconut
handful of blueberries, fresh or frozen
nut or seed butter of choice, to serve
Preheat your oven to 200*c.
In a bowl mix together the all the ingredients apart from the 1/2 sliced banana. Pour into an ovenproof bowl or dish. Add the sliced banana on top. Bake in the oven for 25-30 minutes, until golden and crisp on top. Serve with some nut/seed butter of choice.
