Apple and Blueberry Pie Baked Oats

Say hello to porridge's upstager.... BAKED OATS!

I recently discovered baked oats on Clean Eats By Tay's page and tried loads of her recipes, I was mind-blown. It tasted so amazing - like a cake-y porridge with a crisp top and gooey centre.

I decided to come up with my own combo and it is so delicious. It is like a mix between an apple pie and blueberry crumble. I can't explain it any more, just try it.

Serves 1:

Apple Pie Baked Oats
  • 1/2 mashed banana
  • 100ml almond milk 
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 50g oats 
  • 1/2 grated zucchini (optional)
  • 1/2 large apple
  • handful of blueberries (fresh or frozen)
  • nut or seed butter, to serve

Preheat the oven to 200*c.

Mix together all the ingredients in a bowl and pour into a small baking dish or oven-poof bowl. Bake in the oven for 20-25 minutes until golden brown on top. Serve with some nut butter.
