Zingy Lemon Energy Ball
I love energy balls, they are the perfect mid-afternoon pick me up. Full of flavour and nutrients... a double win.
These energy balls have a tropical twist, a sweet bite and a zingy lemon kick. I love popping them in my school lunch box for a little morning snack-a-roo.
- 100g cashews
- 150g oats
- pinch of salt
- juice of 1 lemon
- 1 tsp vanilla essence
- 100g dates, soaked in boiling water for 5 minutes
In a food processor, blend cashews until they are a fine flour. Blend in the oats and salt. Addin the rest of the ingredients and blend until a chunky, sticky mix forms. Roll into balls, Store in the fridge.
