Curried Bean Burgers

Summer means veggie burger season {disclaimer; I still eat them all year round :) }

These bean burgers are fragrant, spicy and delicious. They have a nice zing and perfect texture, crispy on the outside and chewy in the middle. I love serving mine in a wholemeal pitta with some veg and hummus or in a buddha bowl.

Makes 4

Curried bean burgers
  • 1 x 400g tin cannelini beans
  • handful spinach
  • handful coriander
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 cloves of garlic, peeled
  • 1 tbsp soy sauce or tamari
  • pinch turmeric
  • 1 tbsp curry powder
  • juice of 1/2 a lime

Preheat the oven to 180*c.

In a food processor, blend together all the ingredients. Shape in to patties and place on a baking tray lined with baking paper. Put the tray in the oven for 40 minutes. Set the tray aside for 10 minutes to firm up the burgers. Serve with whatever you please.
