Gingerbread Porridge

I know, i know, Christmas is already over but this gingerbread porridge is perfect for any time of the year.

It is festive-ly spiced, warming and perfectly sweet. I love porridge for a slow releasing start to the morning keeping me fuelled through until lunch time.

Serves 1

gingerbread porridge
  • 60g oats

  • 1 tsp cinnamon

  • 1/4 tsp ground ginger

  • pinch of nutmeg

  • 200-250ml of milk of choice (depending on preferred consistency)

  • 1/2 mashed banana, other 1/2 for topping

  • Nut butter, fresh or frozen berries and other toppings, to serve

In a small sauce pan, over a high heat, add in all the ingredients except for the toppings and stir until it reaches a boil and then turn down to a medium heat to simmer. Stir until it is creamy and your desired consistency (you may need to add some more milk). Pour into a bowl and top with your fave toppings.
