Even though we are the same age, Lu constantly amazes me with her inspiring content both on youtube and her incredible instagram page. I was so happy when she agreed to do this interview as I wanted to know more about Lu after following her for a good while.


What sparked your interest in health?

I struggled with an eating disorder a few years ago which was without a doubt the hardest thing I have ever been through, however during my recovery I was able to re-discover the importance of fuelling yourself with the right foods and I had the chance to develop a passion for veganism, intuitive eating and an anti-diet approach to food.

A typical day on your plate?

My day always starts off with a big bowl of oats topped with fruit and whatever I seem to have lying around the house.

For lunch, I normally pack some potatoes, beans, veggies and hummus with me so that I can eat with my friends at school, and for dinner I always eat whatever I’m craving, which is usually some kind of veggie-packed stew or buddha bowl.

Anyone who knows me will know that I am also constantly snacking throughout the day, and my favourite snacks include dates, nuts, yoghurt and granola and pretty much anything dipped in peanut butter!

Your top five foods for better health?

  1. Oatmeal - I honestly could not imagine waking up without a nourishing bowl of oats to fuel me for the rest of the day! There are so many different ways to cook oats and the endless possible combinations of toppings means I never get bored of them. (check out her other account @oatshare)

  2. Spinach…aka the best greens on the planet.

  3. Beans (especially kidney beans…SO good.)

  4. Peanut butter - such an amazing and delicious source of healthy fats which I use on a daily basis for pretty much everything.

  5. Potatoes.

One food you could not live without?

Sweet potatoes.! I rarely go a day without eating a sweet potato (and if I do, it’s an incredibly sad occasion) - they’re just so versatile, delicious and nourishing.

Have you a motto you live by?

Work hard, be kind, and amazing things will happen.

Who and/or what inspires you?

Ahh too many things to count. I am inspired by everyone and anything I encounter on a daily basis, and I believe we can always learn something from the people we meet in life no matter how different we may be from each other.

Your favourite type of exercise?

Saved By Vegan

I absolutely love pilates, and I also enjoy working out at the gym, yoga and dancing of any sort.

How often do you exercise?

Personally, at this point in my life, I know that exercising regularly would not benefit me as I do not want to fall into my eating disorder habits. I therefore only exercise once a week, which usually only involves going to a pilates or yoga class of some sort, however I look forward to get more active in the future once I learn what works best for my body.

How do you take care of your mental health?

By taking time out for myself, practising self care, treat myself, and always making sure I listen to my body.

What are the key things you have learned in your journey into health and wellbeing?

  1. Food is fuel, and it will never hurt you.

  2. We are all different, so what works for you probably will not work for someone else.

  3. Balance is essential and the key to health,
