Vanilla Protein Souffle (Vegan)

A healthy soufflé that is packed full of protein and tastes delicious….. yes please!

Vivo Life kindly sent me a pack of their amazing protein to try and I can honestly say it tastes amazing. Not only is it delicious and extremely nutritious, all of their packaging is recyclable and BPA free, they ship carbon neutral and their ingredients are organic and vegan…. AMAZING!

This soufflé came from my attempt of making a mug-cake and I could not be happier that I failed and it became a soufflé. It has an epic, golden and crisp outside and a gooey, smooth centre.

Makes 1 soufflé:

Protein Soufflé
  • 1 tsp chia seeds

  • 1 banana

  • 1 serve Vivo Life Vanilla Protein (or use any vanilla protein)

  • 75ml non-dairy milk of choice

  • 2 tbsp wholemeal/spelt/gf/oat flour

  • 1 tsp vanilla essence

  • 1 tsp baking powder

  • Soy, coconut, almond or yoghurt of choice, to serve (or if you a really going for it, a big scoop of dairy-free ice cream is incredible)

  1. Preheat the oven to 200*c.

  2. Mix the chia seeds with 4 tsp water and leave for 5 minutes until a gel forms.

  3. Put all the ingredients including the chis “egg” into a blender and whizz until smooth.

  4. Pour the mix into an oven proof ramekin and bake in the oven for 20 minutes until golden and crisp on top and gooey in the centre.

  5. Serve with yoghurt/ ice cream of choice. (I use alpro soy yoghurt)
