Raspberry & Coconut Overnight Oats
Overnight oats are the perfect grab and go brekkie. You just pop them into a jar the night before and grab them to bring with you to work or where-ever you are going.
I love porridge in the winter, but once it gets to spring and summer, I crave cold brekkies, this one hits the spot. These oats are naturally sweetened by the raspberries and vanilla and are so smooth and creamy. The coconut adds a satisfying crunch to the creaminess of the oats. Filling and healthy this meal will keep you pumped for hours.
- 50g oats
- 50g raspberries
- 150ml coconut water
- 1 tsp vanilla essence
- 1 tbsp coconut flakes or desiccated coconut
- Fresh fruit, to serve (optional)
The night before consuming, place the oats into a jar or bowl. In a blender, blend together the raspberries, coconut water and vanilla essence. Pour the blend into the oats, stir through the coconut. Mix well. Leave to set in the fridge overnight. Top with fresh fruit or other toppings before eating if you wish.
*You can add a tablespoon of milled chia, flaxseeds or protein powder to the mix for extra protein if you wish
