What sparked your interest in health?

Maddie Lymurner Oats

When I was 16, I started working a part time job at a health food store as a cashier. There, I learned so much about alternative medicine, and the power of food. Through that store, I met my boyfriend Kyle, and from there we pursued our interests in health and veganism together.

A typical day on your plate?

Lately in the mornings I’ve been starting my day off with a smoothie. Usually it’s full of things like: mango, banana, hemp seeds, greens powder, and fresh almond milk.

For lunch I’m normally having some type of leftovers from the day before, or just food in the fridge that I’ve got to use up. It normally ends up being something like a bowl of: rice or quinoa, some type of beans, a fresh salad on the side, and one of my homemade dressings.

For dinner I’m always wanting to cook up something delicious, I normally make one of my recipes like: Vegan alfredo pasta, stuffed potatoes, a fresh stir fry with crispy tofu and rice, some homemade burgers, or even something like a homemade soup or chilli.

Your top five foods for better health?

Maddie Lymburner Mac n cheese

This is such a tough one. I believe that there is a place in our diets for all whole plant foods. Anything that is grown by the earth is a health food in my opinion. Having variety in our diets is key. My top 5 personally would be: sweet potatoes, beans, leafy greens, avocado, and any type of fruit.

One food you could not live without?

Potatoes… hands down.

Have you a motto you live by?

I don’t think I could choose just one as I have so many that pop into my head when I hear this question. But I always go back to “be the change you wish to see in the world”.

Who and/or what inspires you?

I get inspiration from so many different, random places. I’m always looking for new things that inspire me and things I can learn from. I think the thing that keeps me most motivated and inspired is the message I try to bring to everyone.

Your favourite type of exercise?

Maddie Lymburner

My favourite type of exercise right how would be hiking, dancing, or going to the gym.

How often do you exercise?

I think it’s important to get the body moving on a daily basis… even if it’s just a light walk. That being said, I like to move daily. But I will do an actual “workout” about 5 days a week.

How do you take care of your mental health?

Great question. I think mental health is so important. If you’re not feeling good mentally, it throws everything off. Exercising or just having a place where I can let go and just focus on one thing is very big for me. I use exercising as a stress reliever. I’m also all about rest, and knowing when to stop and just relax for a little bit. It’s so important to take time to relax, and rest throughout our busy lives, sometimes we can get too caught up and we push ourselves a little bit too far.

Some advice to your 16 year old self?

Maddie Lymburner

Don’t care so much about what other people think of you. Just be yourself and own it. Also, stop stressing so much. Life hasn’t even begun yet!

What are the key things you have learned in your journey into health and fitness?

I’ve learned so much over the past few years. But the key things being: Veganism. Quite possibly the best decision I’ve ever made in my entire life was going vegan. My whole life and overall health and fitness has changed so much since making that decision almost 4 years ago. Learning more about where my food comes from, how it’s processed in my body, etc. was where everything stemmed from.
